Whether they do go into a deep sleep before dying is much open to debate, I've seen compelling scientific evidence to support either way. But, severing the spinal cord - or more accurately, the main nerve - would be a rather quick and painless death....
Honestly, if it works for you - or thats all you can afford or unable to handle being 'handsy' before their death - i do think that freezing is a good way to go about doing things.... There's certainly worse you could do IMO.
