I have always kept a piece of cuttle bone in the tank and they munch on it from time to time. Lately, Joon has taken it and won't let it out of her sight. She drags it around with her but she is eating it.
Is there a time when enough is enough or will she know when to stop?

Hermit crabs are pearty smart. She will know when to stop (Some time crabs will eat a lot of cuttle bone before they go under for a molt)

Too much of any one thing is not always good. If they are guarding the cuttlebone, are the others able to have some too? Have you considered grinding it into a powder and offering a little bit in their dish a couple times a week so all can have some?

There are other pieces of the cuttle bone in the tank but she has now left it alone and is in the food bowl with Romeo eating. She does look like she may be getting ready to molt. I want to re do the tank so I guess I better get busy so she will have a nice clean home to live in.

If she is getting ready to molt have you thought about putting her in a ISO tank? Then the other crabs wont bother her.
