70-83 temp. and I keep the humidity above 70. it does somtimes go down to 60 at night

no but can if needed.
One of the original crabs in the classroom's tank and the teacher the owns the crabs found him this morning under the hut, without a shell on. We iso'd him and offered him 9 shells and some warm water for his abdomen. Also added some maple leaves so he could hide if he wanted to. He was semi active when we moved him, and now its 1 and he's so lethargic and not moving. He is still alive because he will slightly move his leg very slowly every once in a while. Can anyone help me figure out why he might have died so we don't lose the other 3.

Hermit crab products all are bad for our hermies. Those products have a preservative in them that is fatal to crabs in the long run. Also, pretzels, saltines and goldfish all have table salt in them...Iodine is very bad for our crabs.

Hermies need a source of ocean salt water(for salt water aquariums) to thrive. 2 very good brands are Instant Ocean and Oceanic.
Have you calibrated your thermometer(s) and hygrometer?
no
Some hygrometers can be up to 20% off in their readings. You should calibrate yours so you know exactly what it is. Hermies require a constant 75% humidity to be able to breathe properly.
