Temps and humidity can go up and down, as the air temperature in a room can go up and down. The air can dry out in the tank if the lid is uncovered for any length of time, and the humidity will drop.
You should trust those gauges and try to find ways to help them stay stable.
Don't dig up any more crabs, and don't get any new ones yet I think.
You need to get your tank stable so you can be sure the crabs won't die from the humidity and temperature changing all the time.
You may ask someone else for a little help, maybe someone in your family? Maybe they have some ideas. You can tell them you need to get the humidity and temperature to stay the same, they might have some ideas for you, too. You can share what information you've gotten from visiting websites like this one. How does that sound?
