Hermit crabs grow not only from good food and nutrition, but also from muscle growth. If a hermit crab is not physically challenged, it's muslces grow slowly, like humans. If it is challenged, it becomes 'buff' and what is called 'cramping' occurs within the exo. This 'cramping' is what signals the crab to molt, and get a bigger exo.
In conclusion: exercise your crabs! Take them out and let them climb on a tree or the back of your couch. Doing this will strengthen them and shorten the time between molting.
