Every crab is different. Some come up soon after they molt while they are still very pale, some will stay down until they gain a rich color to their exo. Some will be quite active pretty quickly after they come up, others need to rest and regain their strength.
I am sure it all depends on their original health and nutrition before they went down to molt (assuming not surface molt), conditions in the tank, etc.
You basically should just leave them alone, don't pick them up or bother them, until they've been behaving like normal again for a week or so and have their full color back.

I have had a crab come up from molting only to go down again and bury for another week. Sometimes they need to come up for some food or water so they can continue to recover. I've also had crabs come up and be completely active right away.
One thing I noticed about several of my crabs is they tended to enjoy basking after their molt - climbing up high to be nearer the heat lamps and just sitting there for a couple days.

A couple of things to check if you get a surface molter is the depth of substrate (at least 2X the height of your largest crab) and the moisture content of the substrate (has to be molded into a cave without collapsing).

And there are times that even with all the criteria a hermie needs they will molt above substrate because they wanted to. IMO, as long as it is a successful healthy molt no problem.
